My 2 yr old cat, once very playful has stopped playing and doesn't seem interested in anything. She either sleeps or sits and stares at me. She just had her physical and shots and the Vet says she is healthy. Her functions are normal and she eats well. She is the only cat.

From my experience cats can go through various different phases of wanting to play or not. My own cat will have months of always wanting to play with her favourite toy and then for no reason she just wants nothing to do with it at all and cannot be enticed to play at all. But then months later she will start wanting to play agian.
It could be that they are bored with the same old toys and games, i suppose we do so why wouldn't they. perhaps you could try buying your cat something new and interesting to see if that stimulates them, see my cat toy pages on this site for some ideas of the different sorts of cat toy available. If not then just put their old toys away for a while and then bring them out again in a month or so, perhaps they will be missed and be fun again.
It is good that you had your cat checked by a vet etc, so at least you know they are not ill.
